RECIPE: CREAM OF TUNA

Seen the draw near some Christmas parties, I want a simple recipe to propose you but at the same time savory.

INGREDIENTS: 180 grs of Tuna in Box (sott'olio is better), 90 grs of butter (always halves the tuna), 1 egg white of egg, juice of lemon and salt.

PROCEDURE: To pass with the passatutto, in a bowl, the Butter and subsequently the tuna. Finished this operation to actually amalgamate the two ingredients with a wood spoon to get a homogeneous cream.
To add the white of the egg climbed on to snow (it serves for giving more creaminess to your foam), therefore you add the juice of lemon (to like) and a pinch of salt. Remember to always mix you to amalgamate well the various ingredients.
At the end you put for sometime your bowl in the refrigerator.
This Foam you can use smearing her/it to her on the tartines of toasted bread and garnishing her same with smoked salmon, funghetti sottolio, eggs of lompo, fettine of firm eggs or simply smeared on a piece of bread.
